sunnier climes to bring
in his expertise to the South East Asian Markets. Coming from a wide and varied F&B background,
Paul has worked with
many brands across various segments of the industry in challenging environments.
He has worked with some of the world’s largest and most respected brands, such as
Starbucks,
Burger King, Harry
Ramsden’s Fish & Chips and have collaborated with UK celebrity chefs, such as James Martin and
Gino Di Campo.
Moreover, he has taken part in different concepts of managing brands, such as Upper crust, Beer
House, Caffe Ritazza and
Camden, to name a few. Paul has honed his industry expertise, including covering most of the
sector’s segments like grab
& go, casual dining, fast casual & QSR, premium casual, fine dining, contract catering (business
& industry), outdoor
event catering, central production and manufacturing facilities.
Paul is a humble and well-respected industry leader who is extremely commercially astute. He is
a polished public
speaker and has won many awards throughout his career spanning over 28 years. Hailing from
Ireland, Paul obtained his
BSc (Hons) in Economics in London.
- Head Chef, Chef Mohamed Ali Didi
Chef Ali, from Seenu Atoll Hithadhoo Maldives, started his career as a head barman
in Villingili
Island in 1991. After
four years of work, he joined Kuramathi island resort in 1995 as an assistant Chef.
In 1995, he joined Laguna Beach Resort as a Bar manager until 2000. Chef Ali
successfully
completed his Hotel School
studies from 2000 to 2004. Then he joined one of the most famous companies in the tourism
industry, Sunland, as a Head
Chef in Biyaadhoo island resort for eight years.
In 2012, he joined Rihivehi beach resort as a Head Chef until 2016. In 2017, he was
recruited by
Brothers Catering as a
Head Chef.
- Head Chef, Chef Roshan Dilruck Weerapura
Chef Roshan joined Brothers Catering in 2018 as a Head Chef. He has overall
experience in new
product development for
F&B sector and experience in sales, marketing & business management within multinational
companies in the service sector
of Hong Kong, Macau, China and Sri Lanka. He has been employed at recognizable firms such as
Weber Grills, Sri Lankan
Hotel Janaki, Lanka Premier Foods, Gamma Pizza Kraft Lanka, Café’ de Monde, Candy Creations
Manufacturing Group China &
Hong Kong, Southern Cross Trading Co ltd, MIF Macau International Fair (Exhibition), restaurant
trade in Macau as a Chef
and Operations Manager.
- Management Trainee, Mohamed Shaif
In 2007, he joined a well-known company in Maldives, namely Villa Shipping and
Trading Company,
as a Sales and Marketing
Executive. After three years of work in Villa, he joined a private company
called Raagu Company, as an Operations Manager who exports fresh yellow fin tuna worldwide. In
2015, he joined Castaway
Maldives that operates Resorts in Maldives as a Senior Logistics Coordinator. He was employed at
Brothers Catering in
2018 as a Manager Trainee.
- Group Financial Controller, Ranjith K.C Pillai
Ranjith hails from Kerala in India. In 1999, he obtained his bachelor’s degree in
Accounting at
the University of
Kerala, Thiruvananthapuram. In the same year, he joined a well-known chartered accounting firm
in Kollam. After two
years in the accounting practice, in 2001, he moved to Quilon Export Enterprises, an established
cashew exporting and
importing firm. In 2005, he joined Hotel Relax Inn Maldives as Chief Accountant. Additionally,
in 2007, he joined
Brothers Catering as Financial Controller and later as the Group Financial Controller.
